Vermont Tortilla Company started out of a love of fresh tortillas from the Yucatan Peninsula in Mexico. April and Azur Moulaert, realizing that there were few producers of corn tortillas in the U.S. and even fewer that use locally produced corn, dove right into the production process.

Their greenhouse is located in the Indian Orchard neighborhood of Springfield and is the largest urban greenhouse in Massachusetts. As part of the Wellspring family of cooperative businesses, the greenhouse provides jobs with on-the-job training and ownership opportunities for low income city residents.
